Potato or Pa-tah-toe, that is the question. Not specifically how to pronounce them but more like, “how many times can I eat, them?” After you check out this recipe, you’re going to want to keep a lot of them around because everyone will be begging you to make the Best Ever Potato Salad. Being a part of the good cook kitchen experts has allowed me to share so much awesomeness with my family and friends. When they asked me to share a signature dish, I had to really think about which one to talk about. The one that really hit the spot was my potato salad recipe below. I never can find any good already prepared potato salad at my local stores, so it was either figure out how to make it or never eat it again. I couldn’t bear the thought of not having potato salad again so I set off to make some that would be the best I had ever tasted. Don’t just take my word for it, make some and watch your own family oooh and ahhh. Enjoy!
Best Ever Potato Salad
This makes more than enough for a large family or potluck.
4 lbs yukon gold potatoes (washed and cubed)
1 lb of bacon, cut up (YES! BACON), 3 tablespoons of the bacon drippings
1 and 1/3 cup real mayonaise
2 tablespoons mustard (you can use whatever kind you like, we used regular yellow)
2 tsp sea salt
1 tsp pepper
6 hardboiled eggs, peeled and chopped
1 cup of celery, diced
1/ 2 cup green onion, diced
Place your potatoes in a large pot and boil them until they are just tender. If you boil them too long, you will have mashed potato salad and that’s just not as good. The boiling times depend on they kind of potatoes you are using but for the yukon gold I usually boil them for about 10-12 so they don’t get mushy. Drain and run them under cold water in a colander.
While the potatoes are boiling, fry up the bacon. If you cut it up before you fry it, it will cook quicker. You need to fry it extra crispy so it doesn’t get soggy in the salad. Set aside the cooked bacon on a paper-towel lined plate. Don’t forget to save three tablespoons of the drippings for the dressing.
Next, you’ll want to mix up the dressing. Combine the mayo, mustard, salt, pepper and the bacon drippings in a small bowl. Whisk until combined.
Lastly, in a very large bowl fold all the ingredients together. Place covered in refrigerator for at least two hours but overnight is best for the flavors to really come out. ENJOY!

Mini Chef Knife– This is great for dicing and chopping. This is the one I used for slicing the onions and they came out just the way I wanted them to. It’s small size is a bonus because it can easily fit in both a kitchen drawer and the dishwasher.
Santoku Knife, 7″ and the Santoku Knife, 5″ – These are awesome for celery and potatoes in this recipe. They make your cutting duties effortless. Definitely my favorite knives, I feel like a chef with them! They should only be hand washed.
Serrated Cook’s Knife, 5 1/2″ and the Fine Edge Cook’s Knife, 6″ are must haves for your kitchen items. I used the 6’in for the bacon and the 5 1/2 to chop the eggs into beautiful little yummy pieces. Having options with your knives will make cooking more fun!
Vinyl Handle Peeler-I love that this peeler has a comfortable handle. Although I didn’t totally peel the potatoes in this recipe, I did use it to get off any brown spots and it did a gorgeous job.
Smart Scoop Ice Cream Scoop-This baby isn’t only for ice cream. I used it to quickly place a scoop of potato salad onto everyone’s plates. Its faster and neater than a spoon and the presentation made my day.
Stainless Steel Silicone Tip Locking Tongs, 12″– These were perfect for separating the bacon and moving it to a plate. Since they’re safe to 450 degrees, I felt ok using them on the stove. My husband reaches for these everytime he cooks. They would be great for grabbing up some corn on the cob too. YUM!
Collapsible Funnel-No home should be without one! Before this I had to use the cut off top of a 2-liter bottle. That says sanitary, right?! I love using this when I make my own salad dressings. Just insert into the bottle, add the ingredients and shake! Dishwasher safe too!
Deluxe Trigger Ice Cream Scoop– Scoop things with ease and care. No more touching the ice cream to get it out of the scoop. Use it to make giant cookies too! I even use these for casseroles, mashed potatoes and gelatin desserts!
Grater, Fine Zester -It’s so awesome to finally have a zester that actually works! For cheese, chocolate, citrus and more, you will love this as much as I do!
Long Tongs, 12″-You can never have too many tongs!! I use these on the grill often and for serving all kinds of things to my friends and family.
Skewers, 12″ Metal 4ct.-These are so much better for kabobs than other things I’ve tried. The meat and vegetables slide off without splinters. I even use these to make frozen grapes and they even came off without much effort.
Party Frills, 72 count– Great for appetizers and to make your parties festive. I always stock up on these.
