“Mom, what’s for dinner?” As soon as the kids get picked up from school or activities that are even close to dinner time, this question is always one of the first things I hear as they buckle up. Does that happen to you too? It’s like their tummies are always on overdrive! When I say chicken and rice, the smiles quickly spread across their faces because they think it’s delicious and they know it will be done in no time flat!
If there is one thing that I love to cook, especially on those busy weeknights it’s a one pot meal! This easy chicken and rice recipe can be whipped up in about 30 minutes and it doesn’t take a ton of ingredients or preparation. It’s awesome that you can feel free to switch up the vegetables included in the recipe to please different tastes and seasonal vegetables. It would be delicious with broccoli or asparagus too. Super Simple Chicken and Rice
Makes 8-10 servings
2 lbs Chicken Breast Tenders, cut up in bite size pieces (canned chicken breast can be substituted for fresh chicken for an even faster preparation time.)
2 TBS canola oil
1 TBS butter
5 green onions, diced
1/2 TSP pepper
1 TSP salt
2 cups long grain white rice (NOT the instant kind)
1 cup shredded carrots
2 14 oz cans chicken broth (low sodium preferred)
1 1/2 cups water
1. In a large pot, heat the oil and butter until hot. Add the chicken, green onions, pepper and salt and saute until the chicken is browned, about 5 or 6 minutes. Stir frequently.
2. Next, place the rest of the ingredients in the pot and bring it to a boil. Cover and reduce the heat so that it just simmers for about 20-25 minutes. Be sure to check it towards the end of the cooking period so that you can remove it from the heat once all the liquid is absorbed. Serve and enjoy!
