If there is one cookie that I have to have during the holiday season it’s OATMEAL SCOTCHIES!! I didn’t get to see my grandparents for several years while we lived in another state. When we returned one holiday season, these were waiting for me specially made by my grandpa. Now each holiday season, it just doesn’t feel like Christmas until the sweet smell of these baking fill the kitchen with the buttery butterscotch goodness. I’m sharing his recipe in an effort to honor him further. I hope you enjoy it and the cookies!!
1 1/2 cups Bisquick baking mix
3 cups uncooked oats
1 stick butter
3/4 cup sugar
3/4 cup brown sugar
1 1/2 tsp vanilla
1 3/4 cups butterscotch chips
Preheat the oven to 375 degrees. Lightly spray your cookie sheet with cooking spray. Cream the butter and sugar in a medium bowl. Add the baking mix, oats, eggs and vanilla. Combine just until mixed.
Using a cookie dropper, make about a 1 inch ball and place it on your cookie sheet. DO NOT FLATTEN THEM. They will flatten out just enough during the cookie process. Bake for 8-9 minutes. Remove from the oven and let cool for 2 minutes. Place them on a flat platter to finish cooling. Enjoy!!

Having the right tools makes your cookie baking successful. We haven’t purchased new cookie sheets in years but these new sweet creations cookie sheets from Good Cook helped our cookies to cook evenly and to a perfect golden brown. I have never really used a cookie dropper before but it’s really helpful for making all your cookies the same size and shape. Having a cookie turner made specifically for lifting cookies is amazing too. I really wish I would have thought of it sooner!! REMEMBER: do not flatten out these cookies!
