If there’s anything better than my Grandma’s soup on a cold, blustery day I haven’t found it yet. This delicious bowl of warm goodness is easy to make, takes only a few ingredients and will have you feeling warm all over. Pair it with some crusty bread and side salad and you have a meal fit for a Queen (just like Grandma)!
Grandma’s Homemade Hamburger Soup
Ingredients:
64 oz container Tomato Cocktail Juice
(Grandma insists on V8)(you could just use tomato sauce and diced tomatoes or your favorite combination of tamato based deliousness but Grandma says the V8 makes the soup tastier than a butter cookie on Christmas during a blizzard. I’m thinking that’s pretty darn tasty.)
1 carton Beef broth
8 medium Yukon gold potatoes, cut in bite sized pieces
1 1/2 lbs lean ground beef
1 medium sweet onion, diced
1 12oz package frozen mixed vegetables
salt and pepper to taste
Directions:
First, in a large stock pot brown the ground beef and onion on medium until it is no longer pink. Next pour in the potatoes and the mixed vegetables. Finally, pour in the tomato juice and beef broth. Simmer for 30-40 minutes or until the potatoes and veggies are tender. Add salt and pepper to taste. Serve and enjoy!! Be careful though, this soup right outta the pot is practically volcanic.
Feel free to change up the base recipe for your preferences. Use Sazon Season for a spicy kick or use garlic salt instead of regular. Add more vegetables or ground turkey instead of beef. The possibilities are endless! This is a very versatile soup!
