IS THERE EVER A WRONG SEASON FOR ICE CREAM?
Sure you can go and buy some ice cream and that would be good but this ice cream is FAN-FREAKING-TASTIC. If you’re going to eat a boat-load of calories, at least make it worth it.
Show your family you’ve got some standards.
I’ve neglected my chocolate passion for too long but today I’m taking time to make some ice cream! It’s perfect for birthday parties, after dinner dessert or anytime that the chocolate need strikes you! Now wipe that drool off your face and get mixing!
Chocolate Chunk Ice Cream
Ingredients
1½ Cups chocolate chunks
1 Cup milk
1½ Cup superfine granulated (castor) sugar
5 Tbsp cocoa powder
3 Cups heavy cream
2 Tbsp vanilla extract
½ Tsp salt
Directions
In a bowl mix the milk, cocoa powder, sugar, vanilla, and salt. Whisk for 2-3 minutes until everything is fully incorporated.
Add the heavy cream and the chocolate chips. Mix for 3 additional minutes.
Chill the mixture in the fridge over an ice bath for at least 2 hours. (place a freezer safe bowl or pan in the freezer to chill while you are waiting.)
When the 2 hours is up, place your mixture in your frozen pan and place it in the freezer.
Continue vigorously stirring the mixture every 30 minutes until it is firmly frozen.
Serve, top with more chocolate chunks and enjoy.
Tips
Add some mini marshmallows to the mix to make a rocky road!
