Potatoes are a family favorite addition to any meal in our home, whether it’s breakfast, lunch or dinner! We love them in all their fantastic flavors, colors, shapes and sizes. We received the cutest coloring book from the U.S. Potato Board and found it full of some simple, healthy and delicious recipes that we could prepare. We headed off together to make a fingerling potato recipe and actually turned it a learning experience as well!
After browsing the amazing potato section at our local grocery store we picked up 1 and 1/2 pounds of fingerling potatoes. The kids love it when they have the chance to use that hanging scale!
After preheating the oven to 400 degrees, we tossed the potatoes in a medium bowl with 2 tablespoons olive oil and 1 teaspoon of garlic salt.
Then we spread out the potatoes in a single layer on a large shallow baking sheet and cooked them for 30 to 40 minutes. Be sure to stir them several times during the baking time. They are done when they are crisp on the outside and tender on the inside. I used a fork to test them.
