There’s nothing I love more than a good pasta salad and this recipe will have your family begging for more! Perfect for a cookout, potluck or a weeknight dinner this recipe is always a winner. Furthermore, its easy, fast and can be prepared ahead of time for your event or meal.
Ingredients:
2 16 oz boxes of jumbo shells
1 can of chicken breast (large)
1 medium onion finely diced
1 cup celery finely chopped
6 medium radishes
1/3 cup real mayonnaise
salt and pepper to taste
Directions:
Start out by preparing your pasta as directed on the box. Be sure not to overcook. Al dente pasta is perfect for this recipe. I like to salt the water as this adds to the flavor but its totally optional. While the pasta is cooking, clean and chop the onion, celery and radishes. Set aside. Drain canned chicken and shred finely. When pasta has finished cooking, drain and be sure to rinse in cold water. Pour pasta into a large mixing bowl and add vegetables. Toss. Mix together the chicken and the mayonnaise. Add to the pasta. Sprinkle with salt and pepper to taste. Refrigerate and serve when chilled. Enjoy!
